2 basic questions:

1)With the magic wand is possible add to the selection with ctrl + click but how
to subtract?)

2) Using the other selection tools (square, polygonal etc) there is a way to add and subtract to the selection

Yes carlo,
it is possible :
ctrl to add
alt to substract

Don't forget to keep Ctrl or Alt pressed down, while you modify the selected area with a selection tool.
You can try, PFS is warrented against any computer explosure.
