part color, part black and white...HELP PLEASE

i would like to take a photo, and make parts of it color and parts of it black and white... how do i do this? i am trying to take a photo of a duck hunt, and take all of the green heads of the ducks and leave them green, and make the rest of the picture black and white. please help me
